I’ve been buying these little bags of granola bites for a few months now, spending about $4-$5 per bag. A bag that I can easily eat within a few days. I finally smartened up and realized I could just make these suckers at home for a fraction of the cost.

I don’t know why I waited so long to make them at home. I guess I didn’t want to bother with them because I was under the false assumption that they would take too long. Boy oh boy was I wrong.

Now I can whip these treats up in five minutes, pop them in the oven and have some delicious, healthy treats ready to go, all under 30 minutes.

    My favorite part when making these vegan chocolate chip granola bites is using my hands to mix them well. The peanut butter can be a little tricky to mix in with everything, so I found that using my hands was the best way to get them combined well.

    When looking for a vegan brand of chocolate chips, make sure to read the ingredients. Most have milk in them but some are accidentally vegan. A brand called Enjoy life are always vegan and Kirkland chocolate chips are accidentally vegan. These are nice because you can buy them in bulk and always have them on hand.

    If you don’t have a skillet or small baking dish to make these in, just double or triple up the recipe so that you have enough granola to fit in your baking pan of choice. You want to make sure the granola is thick enough and packed in so that the bites aren’t too thin. Also let them cool completely before cutting them into bites or bars, they will stick together a lot better.

    I absolutely love eating these with my morning coffee. They go perfectly together. Eating a little something with my coffee helps my stomach as well. I never do well drinking coffee on an empty stomach.

    Easy five ingredient chocolate chip granola bites

    prep time: 5 minscook time: 25 minstotal time: 30 mins

    Easy, healthy and delicious five ingredient chocolate chip granola bites. Make in under 30 minutes. Perfect sweet treat to eat with coffee.

    ingredients:

    • 1 cup old fashioned oats
    • 1/2 cup peanut butter
    • 1/2 cup maple syrup 
    • 3 TBL ground flax seeds mixed with 6 TBL water
    • 1/2 cup vegan chocolate chips

    instructions:

    1. Pre-heat oven 350 degrees
    2. Mix flax seeds with water and let thicken
    3. Combine all ingredients in mixing bowl.  Mix well 
    4. Put in smaller baking dish or cast iron skillet. Pack down.  Make it a small enough dish so that the bites are thick enough.
    5. Bake for 25-30 minutes
    6. Let cool completely then cut into bite sized pieces or bars.
