What to cook when you don't feel like cooking

We all have those days where we want to spend as little time as possible in the kitchen, but we still want a healthy, satisfying meal.  Here are three easy, quick vegan recipes.  Get your butt in and out of the kitchen faster than you can say "I don't feel like cooking tonight".  They take less than 10 minutes to prep and the rest is just cooking time. 

First up are Baking Sheet Fajitas with Vegan Creamy Sauce.  Season everything in a bowl and then bake it.  So easy!  I add a little bit of smoked paprika and mushrooms to give it that chewy, satisfying, smokey flavor reminiscent of a meaty fajita.

Baking Sheet Fajitas

prep time: 8 MINScook time: 30 MINStotal time: 38 mins

You'll be in and out of the kitchen in no time and leave full and satisfied. This is a quick, easy vegan recipe that is great for a busy weeknight.

ingredients:

  • Frozen bag of Fajita Blend Vegetables
  • Package of Fajita or Taco Seasoning
  • Chipotle or Smoked Paprika
  • TBL Olive Oil
  • 8 white mushrooms (optional if you don't like them)
  • Can of Black Beans
  • Tortilla
Creamy Vegan Sauce
  • 3 TBL Vegan Mayo
  • 1 TBL Vinegar
  • 1/4 tsp salt
  • 1 tsp garlic powder and dried dill
  • 1-2 TBL water or unsweetened vegan milk to thin it out

instructions:

1. Put the Fajita Blend vegetables, mushrooms and black beans into a mixing bowl.  

2. Pour in the spices and the olive oil and mix well

3. Put on an oiled baking sheet and bake at 325 for 30 minutes, stirring halfway through

4. At the very end, throw your tortillas on the tray for 3-5 minutes to warm them up

5. Voila!  You're done!  Assemble the fajita filling in your tortilla and top with toppings of your choice including the Vegan Creamy Sauce


To Make Vegan Creamy Sauce

1. Mix together all ingredients

2. Add a little bit of water or vegan milk at a time until you get the consistency you desire.

Next up we have Crock Pot Chana Masala.  Instead of having to use seven different spices, just get yourself a chana masala powder blend. 

This one is a bit hotter, so get this if you don't mind heat.  And this one doesn't have any cayenne so you can add it to taste or keep it mild.

Yield: 8 servings

Crock-Pot Chana Masala

prep time: 5 MINScook time: 4 hourtotal time: 4 hours and 5 mins

Creamy, delicious curry

ingredients:

  • 3 cans of chickpeas
  • 1-2 TBL of Chana Masala Powder Mix (look at directions on box)
  • Salt to taste
  • 4-5 Cups of Water or vegetable broth
  • Can of crushed tomatoes
  • juice of half a lemon (optional at the end)
  • 4 cloves of garlic
  • 1 can of full fat coconut milk

instructions:

1. Put chickpeas, water, Chana Masala Mix, and tomatoes in crock pot and cook on low for 5-6 hours or high for 4-5 hours

2. Once the curry has thickened and you're about ready to eat add the garlic,  can of coconut milk and the lemon juice.  You can also add cilantro here if you like the flavor

3. Serve on a bed of rice and top with cilantro and onions

Last but not least we have the world's easiest veggie pita with that vegan creamy sauce that never disappoints.  To make this even quicker, use a food processor and put it on the shredding setting or use a hand shredder.  

Yield: 6 servings

Easy Veggie Pita with Vegan Creamy Sauce

prep time: 10 MINScook time: total time: 10 mins

ingredients:

  • 2 carrots
  • 1/4 red cabbage
  • 1 stalk of broccoli
  • 1 cup of shelled edamame or beans of your choice
  • 1/2 cup Italian Dressing
  • Pita pockets
Vegan Creamy Sauce
  • 3 TBL vegan mayo
  • 1 TBL vinegar
  • 2-3 TBL water or unsweetened vegan milk to thin out
  • 1 tsp garlic powder and dill
  • 1/4 tsp salt

instructions:

1. Put your food processor on the shredding setting and shred all of the vegetables.  You can also use any sort of hand chopper tool or a grater to make this a bit easier.  If you don't have any of those items just thinly chop all the vegetables by hand

2. Steam the edamame

3. Put vegetables and edamame in a mixing bowl and pour over the italian dressing.

4. Put veggies into pita pocket and top with vegan creamy sauce

There you have it!  Wasn't that easy?! If all else fails and you absolutely can't stand the thought of cooking, there's always a nice bowl of cereal with soymilk.  That's probably honestly one of my favorite meals.
