Before there was an abundance of vegan dairy alternatives I used canned coconut milk for everything (well, I still do really). I put it over my granola and morning fruit to make a parfait. I put it in curries and soups for a hearty, satisfying cream base. I used it to thicken smoothies that rivaled with the best shakes.

Because we use canned coconut milk and coconut sugar instead of refined white sugar and a heavy whipping cream, this dish is quite a bit healthier. Coconut sugar is minimally processed and still has all of its minerals and fiber intact. The fiber helps it to not go to your blood stream as fast so you won’t get as much of an insulin spike.
