French toast sticks were one of my favorite breakfasts as a kid. They’re so ooey gooey, toasty and delicious and never failed to warm me up on the coldest winter mornings. These french toast sticks are also perfect to make ahead and pop them in the freezer to have a nice breakfast ready to go on busy mornings. You can just take a few out, put them in the toaster or oven and they’ll be ready to go in 5-10 minutes.

I also love pouring a bit of maple syrup in a coffee mug and then putting the french toast sticks in there as a no-fuss breakfast to run out the door with. They fit perfectly in the cup holder of your car and are easy to eat while driving. It’s saved my butt quite a few times.

These bad boys are full of fiber and nutrients to help keep you full and focused. The base with oat flour and uncooked quinoa to give it a nice crunch. They’re able to stick together with a lovely flax egg. Flax has one of the highest sources of lignans which are super bad-ass cancer fighters.

I then poured the batter into two parchment-lined bread pans. Once they were cooked and cooled, I just chopped them up into french toast stick sizes and Voila!! Healthy, crunchy, delicious french toast sticks.

Freezer Friendly Quinoa Apple French Toast Sticks

prep time: 10 minscook time: 35 minstotal time: 45 mins

Perfect recipe for making ahead and putting in the freezer to warm up for a busy morning. Great road food as well. Super healthy and delicious

ingredients:

  • 1 cup uncooked quinoa
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp vanilla
  • 1 medium apple finely chopped with 1 TBL lemon juice drizzled on top
  • 2-3 cups plant milk
  • 1 cup oat flour (or flour of choice)
  • 2 TBL coconut sugar (or sweetener of choice)
  • 1 tsp baking soda
  • 3 TBL ground flax mixed with 3 TBL water (this is the egg replacement)
  • 2 TBL oil (optional)

instructions:

1. Grind up oats in a blender to make flour

2. Pre-heat oven to 350 degrees

3. Chop up apples finely and drizzle lemon juice over them to prevent from browning

4. Combine all dry ingredients together in a bowl: oat flour, quinoa, spices, sugar, baking soda

5. Add in all wet ingredients: plant milk, flax egg, vanilla, oil and apples

6. Stir everything together and let sit for 5 minutes to let baking soda react

7. Line two bread pans with parchment paper. Pour equal parts of mixture into each

8. Bake at 350 degrees for 35-40 minutes

9.  Let cool and then cut into french toast sticks shape 

10.  Place sticks in a freezer friendly container.  Whenever you want to eat them, take them out of the freezer and pop in a toaster or the oven until warm and toasty.  


NOTES:

I love to put syrup in the bottom of a coffee mug and then place french toast sticks in the mug to take with me on the go.  

If you need more milk, feel free to add it until a thick pancake batter consistency.
